Tofu
- 400 g firm or extra-firm tofu, drained
Coating
- 2 tbsp cornstarch
Seasoning
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
Cooking

Glaze
- 2 tbsp low-sodium soy sauce
- 1 tbsp fresh lime juice
- 1 tsp maple syrup or agave

Method
Cook by the cues, not just the clock
Dry tofu
Wrap the tofu in a clean towel, press briefly, then pat every surface dry before cutting into thick planks or cubes.
Coat
Toss the tofu gently with cornstarch, salt and pepper until every face has a thin dry film.
Sear first side
Heat oil over medium-high until shimmering, add tofu in one uncrowded layer and cook undisturbed until deeply golden.
Turn
Flip and brown the remaining major faces, again leaving them undisturbed long enough to color.
Glaze
Mix soy sauce, lime, sweetener and ginger. Lower the heat and add only after the tofu is crisp, tossing briefly to glaze; finish with scallions.
