  • 480 g canned black beans, drained, rinsed and patted dry

Vegetables

  • 150 g mushrooms, finely chopped
  • 100 g yellow onion, finely chopped
  • 80 g carrot, finely grated

Binder

  • 60 g rolled oats, briefly pulsed
  • 50 g breadcrumbs
  • 1 large egg, beaten

Seasoning

  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 0.75 tsp kosher salt

Cooking

  • 2 tbsp olive oil

Method

Cook by the cues, not just the clock

Dry beans

  1. Spread the drained beans on a towel and pat them thoroughly dry.

Cook vegetables

  1. Cook mushrooms, onion and carrot in a skillet until softened and the pan looks dry rather than watery.

Build texture

  1. Mash or pulse the beans until mostly broken but still visibly chunky, then mix with the cooked vegetables, oats, breadcrumbs, egg, soy sauce and seasonings.

Rest

  1. Refrigerate the mixture for at least 30 minutes, then shape 6 even patties.

Cook

  1. Heat oil over medium heat and cook patties until a deep brown crust forms before flipping, then brown the second side.
