Method
Cook by the cues, not just the clock
Build base
Heat olive oil and cook onion, carrot and celery until softened but not deeply browned; add garlic, cumin and thyme for the final minute.
Add lentils
Stir in rinsed lentils, broth and tomatoes and bring just to a simmer.
Simmer gently
Lower the heat so only small bubbles break the surface and cook until the lentils are tender, checking early near 25 minutes.
Finish
Stir in spinach until wilted, then remove from the heat and season with lemon juice and salt.
Serve
Rest uncovered for 5 minutes, adjust broth consistency if needed and serve.
