Base

  • 1 onion, diced
  • 2 cloves garlic, minced

Filling

  • 400 g chopped tomatoes
  • 1 can black beans, drained
  • 1 cup corn kernels, drained
  • 2 cups cooked quinoa
  • 120 g spinach

Finish

  • 120 g shredded cheese, optional

Method

  1. Cook onion, garlic and tomatoes until the mixture is no longer watery.

Finish filling

  1. Fold in beans, corn, quinoa and spinach and cook until cohesive.

Fill peppers

  1. Spoon filling into the peppers without compressing hard.

  1. Bake until peppers are nearly tender.

Finish uncovered

  1. Remove foil, add cheese if using and bake until tender and lightly browned.
