Fresh Pasta Dough problems, diagnosed

Fresh pasta dough is supposed to look dry and shaggy early. If the crumbs still clump when squeezed and you have only worked the dough for a few minutes, keep kneading or let it rest before adding water. If it stays sandy and refuses to clump after sustained kneading, it is genuinely under-hydrated and needs a small amount of additional liquid.
