First check when the salad turned dry. Pasta naturally keeps taking up dressing as it rests, especially when it is dressed warm or held overnight. Food Network recipes explicitly note that pasta can soak up extra dressing as it sits and that make-ahead pasta salad may need additional dressing before serving. Start with the timing, pasta doneness and dressing amount rather than simply pouring in more oil immediately.
