Pasta problems, diagnosed

Bite one piece. If it is soft all the way through and has lost its firm center, overcooking is the first suspect. If the center is still al dente but the outside feels slick, gluey or clumped, surface starch and insufficient early stirring are more likely. If it became gummy only after draining, holding is the stronger clue.
