Guacamole problems, diagnosed

Guacamole browns because cut avocado is exposed to oxygen. The fastest fix is therefore to reduce air contact: smooth the surface, use a barrier directly against the guacamole, refrigerate promptly and include enough fresh lime juice for the recipe. Browning is mainly a quality change, not automatic evidence that the guacamole is unsafe.
