What went wrong?
Look for black specks and smell the roux before adding stock. A properly dark gumbo roux should smell toasted and nutty, not acrid or scorched. If black specks appear in the roux itself, the safest quality fix is to discard it and start over; dilution will not reliably remove a burnt flavor.
First check whether the gumbo has actually finished reducing. Gumbo can build body from roux, okra or filé, but those thickeners behave differently. A very dark roux contributes less thickening than a lighter roux, and a covered or short simmer can leave too much water in the pot. Simmer gently and assess the final consistency before adding more thickener.
