Why Won't My Mayonnaise Thicken?

First decide whether the mayonnaise is thin-but-emulsified or actually broken. If it is smooth, opaque and uniform with no free oil, it may simply need more oil or more effective emulsification. If it is streaky, curdled-looking, or has oil pooling separately, the emulsion has broken and needs to be rebuilt.
