Tzatziki problems, diagnosed

Start with the cucumber and yogurt. Tzatziki stays thick when grated cucumber is salted and squeezed dry and when the yogurt itself is thick enough. Food Network methods either use Greek yogurt or strain conventional yogurt, then drain the cucumber before mixing. Extra lemon juice or undrained cucumber water can quickly loosen the finished sauce.
