Stringy asparagus usually starts with the stalk. Food Network recommends removing the woody base and, for thick spears, peeling the lower stalk because the outer layer can stay fibrous. After prep, match cooking time to spear thickness: thick stalks need enough time to become tender, while pencil-thin stalks can overcook quickly and turn chewy.
