Beef Stew problems, diagnosed

First check whether the stew tastes diluted or simply lacks body. A large volume of thin broth points to too much liquid or too little evaporation. If the flavor is concentrated but the gravy is still loose, check whether the recipe's flour or starch thickener was omitted, undermeasured or never cooked hot enough to swell. Slow cookers and sealed pressure cookers retain more moisture than open stovetop cooking, so a liquid amount that works in one method can stay watery in another.
