  • 1350 g beef bones
  • 900 g oxtail
  • 680 g beef chuck
  • 1 large yellow onion, halved
  • 225 g fresh ginger, halved lengthwise
  • 4 whole cloves
  • 4 star anise pods
  • 1 cinnamon stick
  • 1 tsp black peppercorns
  • 60 ml fish sauce
  • 30 g rock sugar or granulated sugar

Noodles

  • 340 g flat rice noodles

Beef

  • 225 g eye of round or sirloin, sliced paper-thin

Finish

  • 1 small white onion, very thinly sliced
  • 3 scallions, sliced
  • 1 bunch cilantro
  • 1 bunch Thai basil
  • 2 limes, cut into wedges

Clean bones

  1. Blanch the bones, oxtail and chuck briefly, drain and rinse thoroughly, then clean the pot.

Build broth

  1. Char the onion and ginger, then simmer with the cleaned beef, spices, fish sauce and sugar until the broth is aromatic and the chuck is tender. Strain and season.

Prepare noodles

  1. Soak or cook the rice noodles according to their type only until tender-firm, then drain immediately.

Prepare bowls

  1. Divide noodles among hot bowls and add thin raw beef slices, cooked chuck if desired, onion and scallions.

Serve

  1. Ladle very hot broth over the beef and noodles, then serve immediately with cilantro, basil and lime.
