Before you start
What this method is trying to achieve
For crisp-style chow mein, the noodles need genuine browning before sauce arrives. Keep the wok hot, cook vegetables without flooding the pan and thicken the sauce so it coats rather than soaks the noodles.
Success looks like
Know the target before you cook
The noodles should retain crisp golden areas under tender chicken and vegetables, with a glossy sauce and no watery base.

- 170 g Chinese egg noodles or chuka soba
- 90 ml peanut or neutral oil, divided

Stir-fry
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 150 g green cabbage, thinly sliced
- 1 carrot, julienned
- 3 scallions, sliced
Method
Cook by the cues, not just the clock
Cook noodles
Boil noodles just until tender, drain very well and let the surface steam off.
Crisp noodles
Heat part of the oil in a wide skillet or wok and fry the noodles until deeply golden on the underside, then turn and crisp the second side.
Cook chicken and vegetables
Stir-fry chicken over high heat until cooked through, then add garlic, ginger, cabbage and carrot and cook until crisp-tender.
Thicken sauce
Whisk broth, oyster sauce, soy sauce and cornstarch, then add to the hot pan and simmer until glossy and thick enough to coat.
Assemble and serve
Spoon chicken, vegetables and sauce over the crisp noodles, add scallions and serve immediately.
Critical checkpoints
Stop here and check
Before sauce: noodles golden and crisp?
The noodle surface has browned patches and audible crispness.Keep frying if the noodles are still pale and soft.
Sauce: glossy and thickened?
The sauce clings to a spoon rather than running like broth.Simmer a little longer before assembly.
Chow mein soggy?
The crisp noodle base turns wet and soft before serving.Use chow-mein-soggy to check crisping, wok heat, sauce thickness, vegetable moisture and service delay.

After cooking
Storage, reheating & substitutions
Storage
Refrigerate promptly, but expect crisp noodles to soften during storage.
Reheating
Re-crisp noodle portions in a hot skillet and add only enough sauce to warm and coat.
Substitutions
Use dried chuka soba, Chinese egg noodles or another chow-mein style wheat noodle.
