What you need
Noodles
- 340 g Chinese wheat noodles
Pork
- 1 tbsp neutral oil
- 300 g ground pork
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, finely grated
- 1 tbsp soy sauce
Sauce
- 45 g sesame paste or tahini
- 2 tbsp chile oil
- 1 tbsp soy sauce
- 1 tbsp Chinkiang black vinegar
- 1 tsp sugar
- 120 ml hot water or reserved noodle water — add gradually as needed
Finish
- 2 scallions, thinly sliced
- 35 g roasted peanuts, chopped
- 150 g baby bok choy, blanched or stir-fried
Method
Cook by the cues, not just the clock
Make sauce
Whisk sesame paste, chile oil, soy sauce, vinegar and sugar. Add hot water a little at a time until the sauce is smooth and flows slowly from a spoon.
Cook pork
Heat a wok over high heat, brown the pork, then add garlic, ginger and soy sauce and cook until aromatic and the meat is cooked through.
Cook noodles
Boil the noodles only until al dente or package tender, then drain. Reserve some cooking water.
Toss
Add the hot noodles to the sauce and toss immediately. Add reserved noodle water by the tablespoon if the sauce tightens.
Serve
Divide into bowls and top with pork, bok choy, scallions, peanuts and extra chile oil.

Storage
Store noodles, pork topping and sauce separately when possible. Refrigerate promptly.
Reheating
Reheat gently with a splash of hot water or broth to loosen the sauce.
Substitutions
Use Chinese wheat noodles, fresh ramen-style wheat noodles or another springy wheat noodle. Tahini can stand in for Chinese sesame paste with a different flavor.
