  • 45 g all-purpose flour — About 1/3 cup, divided.

Browning

  • 3 tbsp olive oil

Vegetables

  • 450 g small potatoes, halved — About 1 lb.
  • 225 g cremini mushrooms, halved
  • 3 carrots, cut into chunks
  • 1 yellow onion, chopped

Base

  • 2 tbsp tomato paste
  • 240 ml dry red wine — 1 cup; optional.
  • 475 ml low-sodium beef broth

Herbs

  • 3 sprigs fresh thyme

Finish

  • 1/2 cup chopped parsley

Method

Cook by the cues, not just the clock

Brown the beef

  1. Season beef with paprika, salt and pepper, coat lightly with some of the flour, and brown in hot oil. Transfer to the slow cooker with potatoes, mushrooms, carrots and onion.

Make thick gravy

  1. Cook tomato paste briefly in the skillet, whisk in the remaining flour and wine, then add broth and thyme. Bring to a simmer while whisking until the gravy is smooth and visibly thick.

Slow-cook

  1. Pour the gravy over the beef and vegetables. Cover and cook on LOW about 8 hours, until the beef and vegetables are tender.

Check tenderness

  1. Test a beef cube with a fork. If it still resists and the cut is chuck, continue cooking until it yields rather than relying only on the clock.

Finish consistency

  1. Remove thyme stems, stir in parsley and taste. If the gravy is unexpectedly thin, diagnose the liquid/thickener balance before adding more random ingredients.
