Method

Coat and brown
Dust with flour, dip in egg and brown briefly on both sides.
Remove chicken
Transfer browned cutlets to a plate.
Reduce sauce
Add wine, stock and lemon and reduce.
Finish
Swirl in butter and return chicken briefly.
