Before you start
What this method is trying to achieve
Air fryers cook the outside quickly, which makes uneven chicken breast easy to overcook at the thin end while the thick center catches up. Even the thickness first, add only a light coating of oil and seasoning, keep each piece exposed to circulating air and use a thermometer rather than extending the cook until the meat looks dry.
Success looks like
Know the target before you cook
The chicken should be browned and seasoned outside, opaque and juicy inside, and reach at least 165°F / 73.9°C at the thickest point.
Ingredients
What you need
Chicken
- 4 pieces boneless skinless chicken breasts, about 170 to 225 g / 6 to 8 oz each — Use pieces of similar size.
- 1 tbsp olive or rapeseed oil
Seasoning
- 1 tsp kosher salt — Adjust to taste and crystal size.
- 1 1/2 tsp garlic powder
- 1 tsp sweet or smoked paprika
- 1 tsp dried mixed herbs
- 1/2 tsp black pepper, freshly ground
Method
Cook by the cues, not just the clock
Even the thickness
Pat the breasts dry. If one end is much thicker than the other, gently pound only the thickest area until each piece is closer to an even thickness.
Season
Rub the chicken lightly with oil. Mix the salt, garlic, paprika, herbs and pepper and coat both sides evenly.
Air fry in one layer
Preheat the air fryer to 180°C / 355°F if your model benefits from preheating. Arrange the breasts in a single layer with space around them and cook for about 9 to 10 minutes.
Turn and finish
Turn the breasts and continue air frying until the thickest point of every piece reaches at least 74°C / 165°F, generally another 7 to 10 minutes depending on thickness and machine.
Rest
Move the chicken to a clean plate and rest for 5 minutes before slicing.
Critical checkpoints
Stop here and check
Before cooking: are the breasts similar in thickness?
The thickest ends have been gently evened so no piece has a dramatic wedge shape.Pound only the thick section more if needed.
At the finish: did the thickest point reach 165°F?
An instant-read thermometer reads at least 165°F / 73.9°C in the thickest part.If lower, continue cooking in short intervals; if already at temperature, remove instead of extending the cook for extra browning.
Cooked through but rubbery or dry?
The meat is safe but firm, stringy, dry or unusually tough to chew.Use CookClue's chicken-breast-tough diagnosis to distinguish overcooking, uneven thickness and abnormal meat texture.

Storage, reheating & substitutions
Storage
Cool promptly and refrigerate covered. Use cooked chicken within a few days or freeze for longer storage.
Reheating
Reheat gently in the air fryer at a lower temperature just until hot; prolonged reheating can make lean breast meat tougher.
Substitutions
Use another mild high-heat oil in place of rapeseed or olive oil. Seasonings can change, but keep the chicken pieces similar in thickness.

Food Network explains that air fryers rely on rapidly circulating hot air around exposed food surfaces and that stacked chicken blocks that airflow.
