Method

Cook and cool chicken
Cook the chicken until safely done, then cool it completely before dicing.
Mix dressing
Whisk mayonnaise, lemon juice, Dijon, salt and pepper until smooth.
Combine solids
Toss cooled chicken with celery, shallot, dill and parsley.
Dress gradually
Fold in most of the dressing, adding the rest only if the chicken still looks undercoated.
Chill
Cover and refrigerate at least 1 hour, then stir and check for free liquid before serving.
