Classic egg salad with chopped hard-cooked eggs, mayonnaise, celery, onion and herbs

Before you start

What this method is trying to achieve

The easiest control is temperature and moisture: cool the eggs completely, keep celery and onion dry, and use a measured amount of mayonnaise and lemon rather than adding liquid by feel.

Success looks like

Know the target before you cook

The salad should be creamy but moundable, with distinct pieces of egg and no watery layer.

  1. Transfer eggs to ice water and chill fully before peeling.

Mix dressing

  1. Whisk mayonnaise, Dijon, lemon, salt and pepper.

Combine

Critical checkpoints

Stop here and check

temperature

Eggs fully cold?

The peeled eggs are cool through the center.

Chill longer before mixing if warm.

other

Add-ins dry?

No rinse water or pickle liquid is clinging to vegetables.

Blot before mixing.

other

Egg salad watery?

Free liquid appears or the salad becomes too loose to mound.

Use egg-salad-watery to check holding, wet add-ins, warm eggs, acid and mayonnaise ratio.
