Ravioli problems, diagnosed

Look at where the ravioli failed. If the filling escaped through the seam while the pasta sheet stayed intact, diagnose the seal: trapped air, a weak bond, too much filling, or dry/floured edges. If the seam stayed closed but the pocket split across the face, diagnose sheet strength and cooking stress instead. If the ravioli only break when you drain them, the cooking may have succeeded and the handling step is the real problem.
