Most ravioli advice assumes every burst is a sealing mistake. That misses an important second failure: a well-sealed raviolo can split through the pasta sheet itself. The wreckage gives you a fast diagnostic clue — seam, pocket face, or post-cook handling — and each branch needs a different correction.

Start at the top, but skip anything that clearly does not match your batch. Evidence labels describe the support for each cause, not a fake probability score.
Air was trapped around the filling
The raviolo puffs noticeably in the water and the failure often starts near the filling mound or one end of the seam.
Cut open an uncooked raviolo from the same batch. If you can see an air pocket between filling and pasta, trapped air is a strong match.
For the uncooked batch, press from the filling outward to expel air before resealing the edge.
Shape from the center outward and deliberately press out air before completing the seal.
The seam did not bond strongly enough
The raviolo opens cleanly along the edge while the pasta face remains intact.
Inspect an uncooked seam. If it peels apart with very little resistance or is dusty with flour, the bond is weak.
Brush excess flour away, lightly moisten the sealing area if the method calls for it, and press the seam firmly before cooking.
Keep unused pasta covered, avoid flour on the sealing zone, and use water or egg wash according to the recipe.
The pasta sheet was too thin for the filling load
The seam remains visibly closed while the pasta tears across the center or shoulder of the pocket.
Compare one slightly thicker test raviolo made with the same filling amount. If the thicker pocket survives, sheet strength was limiting.
Cook the remaining batch at gentler agitation and avoid long holding in the water.
Use an even sheet thickness appropriate to filled pasta; King Arthur's tested ravioli method uses about 0.6 mm and a controlled one-tablespoon filling.
The pocket was overfilled
The ravioli look tightly domed, the filling reaches close to the edge, or several failures start where the pasta is stretched over the mound.
Compare the filling amount with the recipe and make one smaller-filled test raviolo.
Reduce the filling in the uncooked batch and reseal with a wider clean border.
Portion filling consistently and leave enough bare pasta around each mound for a full seal.
The ravioli were stressed by the pot or colander
Ravioli stay intact for most of cooking but tear as they collide, are stirred hard, or are poured into a colander.
Lift one test batch gently with a spider or slotted spoon. If those survive while the drained batch breaks, handling is the cause.
Lower the cooking agitation, cook in smaller batches, and lift finished ravioli directly into the sauce.
Use a spacious pot and remove cooked ravioli with a spider or slotted spoon rather than dumping them into a colander.

Filled pasta is a pressure-and-structure problem. The seal must bond strongly enough to contain the filling, but the pasta sheet also has to tolerate expansion, hydration, and movement in the pot. Trapped air expands when heated. Very thin or dried pasta sheets have less margin for stress, while rough handling after cooking can tear a delicate pocket that survived the boil.
