Why Do My Ravioli Burst Open?

Look at where the ravioli failed. If the filling escaped through the seam while the pasta sheet stayed intact, diagnose the seal: trapped air, a weak bond, too much filling, or dry/floured edges. If the seam stayed closed but the pocket split across the face, diagnose sheet strength and cooking stress instead. Stop and inspect the failure location. For a seam opening, brush off flour, expel air, lightly moisten if appropriate, and reseal the uncooked ravioli. For a face split, test one slightly thicker or less-filled piece and reduce the water to a gentle boil. For draining damage, lift finished ravioli one by one with a spider or slotted spoon directly into sauce.

Limit: Already-split ravioli cannot be resealed after cooking, and a dried-out pasta sheet may remain fragile even if the seam is repaired.
