Why Did My Hollandaise Break?

Look at the texture before trying to save it. A thin, greasy sauce with free butter has lost its emulsion and is usually recoverable. A sauce with curd-like or scrambled-egg solids has overheated and coagulated the yolks; that version cannot be restored to smooth hollandaise.
